Kalamazoo Farmer’s Market Collection

Today Tim and I went to the Kalamazoo Farmer’s Market for local fresh produce. There were approximately 60 booths with everything from blueberries to fresh cut flowers. We decided to take our cooler for items that we purchased that would have to stay cool and a cute basket (I bought it there 2 years ago) for everything else. Can I just say I LOVE GOING TO THE MARKET! There are wonderful people to meet with all different stories like the guy I met today that makes vegetarian empanadas with all fresh ingredients. I bought one of his sweet potato empanadas. It was de-li-cious! So here are the fresh items we bought today:
Raspberries
Blueberries
Blackberries
Potatoes
Boston Lettuce (Butter)
Zucchini
Cucumber
Fresh Goat cheese
Green Beans
Home-made salsa
Sweet Potato Empanada

My plan is to freeze the all the berries and some of the green beans. Everything else will be happily eaten this week! Next week, I’m taking my mother!
